Georgíumaður is declined just like maður, which is irregular. Here is its declension:

Sg. nom. maður Pl. nom. menn (mennirnir with the article!)
Sg. acc. mann Pl. acc. menn
Sg. dat. manni Pl. dat. mönnum
Sg. gen. manns Pl. gen. manna

The nouns ending in -i are masculine nouns, like tími - time.
